Today's Cozy Cafe recipe is for double chocolate chip scones! These scones are a lightly sweet treat that pair well with sweet beverages, and can be served with jam, cream, or butter.
These scones can be served in a variety of shapes: the classic triangle/wedge, biscuit-like rounds, or even fun custom shapes (see below for the direwolf scones one Cozy Cafe team member made for an ill-fated Game of Thrones premiere party, where the food was fantastic, but the show disappointed the world at large).
Double Chocolate Chip Scones
Ingredients:
1 cup flour
1/4 cup + 1 tablespoon sugar
1.5 teaspoons baking powder
Pinch salt
4 tablespoons cold butter
1 egg
1/4 cup + 2 tablespoons heavy whipping cream
1/2 cup chocolate chips
1/2 cup white chocolate chips
2 tablespoons flour
Parchment paper
Directions:
Preheat oven to 350 degrees F.
Mix flour, sugar, baking powder, and salt.
Add butter gradually, mixing until mixture has a crumb-like texture.
Add in egg and 1/4 cup heavy whipping cream.
Mix in chocolate chips.
Cover cutting board or other surface with flour.
Dump batter onto floured surface, knead and shape into circle.
Cut dough into 6-8 wedges.
Place wedges on parchment paper covered baking sheet.
Using a pasty brush, brush each scone with remaining heavy cream.
Sprinkle each scone with remaining sugar.
Bake for 15-20 minutes or until golden brown.
Optional: Drizzle each scone with melted white chocolate.
